Hi Munchkin Blog Readers! @lunchesandlittles here, and can you believe it’s almost Christmas?! This whole year has just flown by for us, and we have no idea how we’re already more than halfway through the month of December… but, here we are!

In our home, as we get closer and closer to Christmas, we love making festive food – and one of our most well-loved Christmas-time breakfasts just happen to be these Festive Reindeer Pancakes. I love these little guys (or girls!); and like to imagine Mrs. Claus making a whole big batch for all the little elves, and of course – the big man himself: Santa! These pancakes are simple to make, fluffy, topped with fruit, and vegan, if desired.

Little reindeers on plates are sure to make your own little ones smile from ear to ear. Just look at how cute they are! Made from a homemade whole wheat pancake mix and decorated with blueberry antlers, a strawberry nose, and banana and blueberry eyes – these aren’t just perfectly festive, they are also a healthy way to start the day – or, if you prefer; breakfast for dinner (a family fave around here!) These Festive Reindeer Pancakes are great anytime and are always a fun mealtime treat around here.

INGREDIENTS:

2 and 1/2 cups flour
1/4 cup sugar (could substitute another sweetener if desired)
2 tbsp baking powder
1/2 tsp salt (we use @redmondrealsalt)
1 tsp cinnamon
1 and 1/2 cups milk of choice (keep recipe vegan by using a dairy-free milk, we use @ripplefoods Ripple Original Milk)
2 flax eggs (could use regular eggs if not keeping recipe vegan)
2 tsp pure vanilla extract
2 tbp coconut oil
You will also need: additional coconut oil for greasing pan (could also use cooking spray if desired), butter/vegan butter alternative, as well as toppings to make the reindeer faces, including blueberries, raspberries, banana slices, and strawberries. It would also be handy to have a couple of cookie cutters on hand to shape your pancakes. We used a medium-sized circle cutter (for reindeer head), a small circle (for reindeer snout), and a small oval shaped one for the ears. This is optional and will make assembly easier, however, these cutters are not necessary.

INSTRUCTIONS:

Start off by sifting your flour into a large mixing bowl.
Next, add in the following: sugar, baking powder, salt and cinnamon. Set aside.
Then, add in your milk, flax eggs, vanilla extract and coconut oil. Mix until well-combined, but be careful not to overmix. Set mixture aside.
Next, heat up a pan or griddle and lightly grease with a little coconut oil.
Once your pan/griddle is hot, add batter to pan, forming pancakes (we used approximately 1/4 cup batter per pancake).
Cook pancakes as you normally would, waiting for small bubbles to form before flipping over. Cook pancakes until they are lightly browned/cooked through. Then remove and keep warm.
Repeat until you have used all batter. Please note: recipe makes approximately 12- 15 pancakes, depending on size of each.
To make each reindeer: cut pancake with a large circular cutter or just use a larger sized pancake formed in a circle shape as the base/head. Then, cut a smaller circle for the snout from another pancake, and position as shown. Use an oval type cutter (we used a Christmas light bulb shaped cutter and just cut it across at one end to line up with the head) to cut out two ears. Then, use various fruits to form the rest of face: we used banana slices and blueberries for eyes, blueberries for antlers, raspberries for the nose and even strawberries (cut into hearts) to form bows for the girl reindeer as shown below. For an extra fun activity – let your kids design their own reindeer faces, and get creative with it!
